Something quick and easy for a fun, meatless meal: Buffalo Chickpea Lettuce Wraps. Chickpeas tossed in hot sauce, honey and a smoky hint of barbecue sauce, spooned into lettuce leaves, topped with shredded carrot, thinly sliced celery and drizzled with blue cheese sauce. I prefer to make my own blue cheese sauce and hot sauce but for an even speedier meal, I won’t judge if you use bottled sauce.

SQUASH, GOAT CHEESE & STICKY WALNUT SALAD
I consider Squash, Goat Cheese & Sticky Walnut Salad as the perfect transitional salad as winter comes to a close and spring lurks around the corner in anticipation. This salad, as many good recipes do, came from a combination of a craving and the need to use up food in my fridge. Creativity comes in many forms my friend.

CRISPY CHICKEN WITH LEMON BUTTER
Modest in appearance Crispy Chicken with Lemon Butter beguiles its taste and texture. So wonderfully crunchy and bursting with flavor from the fresh herbs, lemon and parmesan this might not look like anything special but I assure you - it is! I love the caper and lemon butter sauce with the chicken as anything intensely lemony is so good with breaded and fried meats and veg, but really, wedges of lemon would be a perfectly suitable accompaniment to the crispy chicken if you either don't like
COTTAGE PIE
With a rich beef and veggie filling flavored with wine, Worcestershire sauce, good ketchup and lots of pepper then topped with cheesy mashed potato, Cottage Pie is the granddaddy of comfort foods. Loved by kids and adults, being so simple to make and so economical, this is a must for a weeknight meal or a lazy Sunday supper. I'm certain you'll have the ingredients for this in your fridge, freezer and store cupboard.

Butterscotch Pudding is such a winter-warmer of a dessert. Simple to make, the pudding creates its own toffee sauce as it bakes, giving you a soft, cake-like top with the most glorious sauce lurking underneath the cake. All you need to do is scoop some vanilla ice cream to serve with it. This really needs to be served warm or hot. And is best eaten on the day of cooking otherwise the cake soaks up the sauce.
