With many of us doing Easter a little differently this year, I thought I’d put together some recipes you might enjoy over this time. Some you might want to whip up now, others might be booked marked for later. This collection of Happy Easter recipes has everything from brunchy recipes like Salmon, Leek and Ricotta Tarts to decadent chocolate desserts such as Chocolate Truffle Meringue Pie.

And really crunchy roasted potatoes.

Do you do ham for Easter? If so, you’ll need my Sticky Apricot Mustard Glazed Ham recipe with a really easy and very delish apricot chutney.
As things are so different this Easter, my husband suggested these crispy wings with homemade blue cheese sauce for our Easter lunch. I’m tempted because he will make them and I won’t have to cook apart from throwing together the blue cheese sauce. Nothing taxing. I can do that.

I toyed with the idea of a a stuffed pork loin, maybe even putting it in the smoker. I love this Roast Pork with Apricot Stuffing and Orange Brandy Gravy recipe. But then I’d have to do all the cooking. Wait, sorry, I forgot I’m supposed to be helping you, not figuring out my menu. I got side-tracked. It happens. A lot.

Then there’s dessert. Now are you into something dense and chocolatey or light and luscious like this Lemon Tart? This tart recipe is one of my favorite desserts. Any time of year.
Whatever your Easter menu plans are – I imagine they’re stay-at-home plans, I hope you nurture yourself and your loved ones with something delicious. While most will be spending Easter in somewhat unusual circumstances this year, it doesn’t mean we can’t make the holiday special.
