TOMATO TARTE TATIN

Although it may not be tomato season, grape & cherry tomatoes are always available. With a handful of ingredients, this Tomato Tarte Tatin requires so little work but the end result is simple, rustic & delish. Tomatoes, ready-made puff pastry, a little sugar & balsamic vinegar is all that’s required to produce the sweet, tart flavors. With some fresh herbs scattered at the end for prettiness. One thing to to be diligent about – once the tarte has it’s rested for 5 minutes then serve it immediately. This will ensure the pastry is still crispy.

Originating in France, the tarte tatin is most commonly apple & served with cream or ice cream. We deviated here & use tomatoes. Sugar is caramelized, balsamic is added, then the tomatoes are tumbled in & the pastry is tucked in around the side of the pan & 30 minutes or baking you’re rewarded with flaky puff pastry with a sweet & vibrant topping.

Serve this for a nice lunch with the girls – or guys served with a simple salad. Or as a starter with some aged, cheek-puckering cheddar. Rustic simplicity. I hope you’re all hanging in there. Remember, this too shall pass. For me, the day is done, time for bed.

TOMATO TARTE TATIN

Originating in France, a tarte tatin is originally a dessert made with apples. Here, I’ve used tomatoes for a savory version for a light lunch served with a salad or an easy starter.

Equipment

  • 8 to 8 1/2 inch ovenproof pan such as cast iron. Measure the pan across the bottom.
  • Something about 9 1/2 inches in diameter to use as a guide for cutting the pastry
  • Rolling Pin

Ingredients

US Customary – Metric
  • 1 sheet store-bought puff pastry 1/2 17.3 oz/ 490g package, thawed according to package directions
  • a little all-purpose flour for dusting
  • 1/3 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon balsamic vinegar
  • 1 lb grape or cherry tomatoes
  • pinch sea salt & freshly ground pepper
  • basil & oregano leaves, for garnish

Instructions

  • Roll the sheet of pastry on a lightly floured surface until it’s large enough to cut a 9 1/2-inch circle from it. Cut the pastry & set aside.
  • Stir sugar & water together in an 8 to 8 1/2-inch ovenproof pan over medium-high heat. Boil, without stirring, for 5 minutes or until golden brown. Carefully add the vinegar; stir.
  • Add the tomatoes, lightly pressing them down into a single layer. Sprinkle with salt & pepper.
  • Remove from the heat. Lay pastry over tomatoes & tuck the edge down into pan. Cut 3 small slits in the pastry. Bake for 30 minutes or until pastry is golden brown. Let stand for 5 minutes.
  • Place a plate over the top of the pan, firmly holding it in place & carefully invert the tarte tatin onto the plate. If any tomatoes stick to the pan, simple poke them back where they came.
  • Sprinkle with a little more salt & pepper. Top with herbs. Cut into wedges to serve.

Finnish Mustard - move over every other mustard I’ve ever loved, this is my new favourite. The recipe is an adaptation of @tessakiros from #fallingcloudberries a cookbook I highly recommend. If a mustard can be decadent then this is it. It’s also so simple to make. 
I purged many of my cookbooks recently. I’m replacing some with cookbooks I want to cook from and will make a point of using. Beth from @oldetymemarketplace along with @downshilohroad & @myrustichouse have started a fun hashtag to encourage us to make & share recipes from our cookbooks #friendswhocookwithabook

QUICK & EASY TIRAMISU - a quick word to anyone who QUICK & EASY TIRAMISU - a quick word to anyone who has to add whipped cream to a recipe that’s having its pic taken - never use canned cream. You know the shit in a can I’m talking about?! That stuff breaks down quickly & is total crap. You need to whip the cream yourself and, you need to stabilize it with some powdered sugar. And don’t over whip the cream. Whip 1 1/2 cups of heavy cream in a cold bowl until it’s starting to thicken, add about 1/3 - 1/2 cup powdered sugar, whip until soft peaks form & then you can make great swirls, dollops or pipe it & it’ll behave & stay looking good to have its pic taken. Perfect swirls & dollops = pretty pics.

This recipe is so easy, only a handful of ingredients and the slow cooker does almost all the work for you.  I do love a good noodle slurping session & this recipe is perfect for it. SWEET CHILI MISO SALMON & STIR-FRIED VEGGIES - who SWEET CHILI MISO SALMON & STIR-FRIED VEGGIES - who made new year’s resolution to go on a diet? God I’ve been on so many bloody diets. They work of course, as long as one stays on diet of choice. Kudos to those who do. As a mere mortal & coupled with my recipe testing, writing, styling & such I can’t, nor do I want to, eliminate whole food groups from my diet. I fail miserably at it. Then I beat myself up. And the vicious cycle goes around & around. My health - physical & mental & business are my main focuses this year. Diets are kicked to the curb along with negative self-talk. Enough already.  Wholesome foods, moving my body with exercise that makes me happy & I want to do is key. Who else feels the same?
